The Sake

Bikan Yusho is a Kyoto made Sake and is regarded as a masterpiece of brewing. It is the finest gem that brings together all the knowledge and ideas possessed by the brewery.
A superbly low production run of only 400 bottles and not publicly sold in Japan, this Sake is a true rarity and HighSake is proud to represent this brand.
Unlike traditional sake, the sophisticated design of the bottle creates an atmosphere like a high-class champagne and the box with a black chic design produces a sense of luxury, and is a perfect gift for important occasions.
The Sake, unusually and cleverly, does not clearly indicate the specific name, and the percentage of milled rice on the label is undisclosed. The brewery believes that you can then enjoy it with free sensitivity, without pre-judging or prejudice. To this end you can be assured the polishing is of the highest grade.

There is a fruity and colourful scent at the moment of opening the bottle. The volume of the taste is a unique combination of different flavours. The sweetness, sourness and umami tastes are woven in layers and it produces a concentrated original taste. It is truly a depth of wonderful Sake.

The Brewery

Award winning Joyo brewery was founded in 1895 and is a 4th generation brewer. They are based in south Kyoto, a rich natural area blessed with a temperate climate and on the Kizu river.
They use water drawn from their own well 100 meters underground and they grow only the highest quality 5 million stone and Yamada rice. The management stands by traditional brewing techniques as they believe it produces the purest Sake.
Focusing on producing the highest quality Sake in small batches their head brewer is a highly skilled 40 year veteran of his craft. Most of the work is done by hand using traditional methods and they put their heart and soul into each bottle. They believe in locally sourcing and supporting local companies whenever possible.
Free from ideas, not bound by judgement, this is Bikan Excellent Class
